Tempoyak (Fermented Durian Paste)

A Malay condiment made using durian flesh and a little bit of salt that is fermented for a few days. Not usually eaten on its own, this pungent and flavorful paste is often cooked as sambal or included in recipes such as Gulai Tempoyak or Pais Tempoyak.
